From Montego Bay to a National Partnership: One Jamaican Chef Is Bringing Jamaica’s Most Iconic Street Food to Australia
International private chef May Walker announces a national partnership with premium Victorian manufacturer Wonder Pies, introducing authentic Jamaican patties to Australians on a national scale.
MELBOURNE, AUSTRALIA - What began as one woman’s search for the flavours of home has grown into a national partnership that will introduce one of Jamaica’s most iconic foods to Australians across the country.
Island Crust Patties, founded in Melbourne by Jamaican-born chef and hospitality entrepreneur May Walker, has entered into a national partnership with Wonder Pies, the premium Victorian pie manufacturer founded by acclaimed chef and food entrepreneur Ray Capaldi.
A Jamaican patty is Jamaica’s iconic handheld food - a flaky, golden pastry filled with richly seasoned meat or vegetables and bold Caribbean spices. Found everywhere from neighbourhood bakeries and roadside shops to school canteens and sporting events, it is as much a part of Jamaican culture as the meat pie is to Australia.
The partnership gives Island Crust the capacity to grow while preserving the founding belief at the heart of the brand: great food should never lose its authenticity as it grows.
“A Jamaican patty is one of the foods that defines Jamaica. It’s what you grab on the way to school, after a night out, on your lunch break or before jumping on the bus. Every Jamaican has a favourite bakery, a favourite filling and memories attached to it,” Walker said.
Born in Montego Bay, Jamaica, Walker built an international career as a private chef, cooking aboard luxury yachts and on private islands for high-profile clients around the world before settling in Melbourne.
As Island Crust gained momentum, multiple Australian manufacturers expressed interest in partnering with the brand. Walker ultimately chose Wonder Pies.
“I knew Wonder Pies would protect the integrity of the product. Their standards are second to none, and they understand that authenticity can never be compromised,” Walker said.
For Capaldi, the decision was immediate.

The partnership coincides with Island Crust’s Jamaica 64 campaign, celebrating 64 years of Jamaican independence and carrying the message:
