I grew up in Jamaica, where the patty is part of everyday life and one of the flavours that defined my childhood.

After leaving Jamaica, my career as a chef took me around the world, cooking in luxury homes and kitchens across Europe, Asia and Australia. But no matter where I worked, I always found myself coming back to the food I grew up with.

Years later, living in Melbourne and raising my children, I wanted them to experience the flavours and traditions that had shaped my childhood. When I couldn't find a Jamaican patty that tasted like the ones I remembered, I started making them myself.

Friends became customers, customers became regulars, and before long, what began as a personal connection to home had grown into Island Crust.

Today, Island Crust is proudly introducing one of Jamaica's most iconic foods to Australia. In partnership with Wonder Pies, Island Crust is bringing Jamaican patties into commercial production in Australia for the first time. Together, we are introducing a Jamaican icon to the Australian food landscape with authenticity, quality and scale.
